WINEMAKING: | The grapes were left on the vine for longer than other white varieties to allow development of the natural sweetness. Upon harvesting, the grapes were pressed, then fermented at a low temperature to preserve the freshness. Winemaking was kept to a minimum to highlight the regional and varietal characters. |
