Angus' Watermelon, Feta & Mint Salad

Ingredients

  • 4 cups chilled watermelon, cubed
  • 150g feta, crumbled
  • A handful of fresh mint leaves, roughly torn
  • Juice of 1 lime
  • Drizzle of extra virgin olive oil
  • Cracked black pepper
  • Optional: a sprinkle of toasted pine nuts

Instructions

In a large bowl, add the watermelon cubes and gently mix in the crumbled feta.

Add the mint leaves and toss lightly.

Squeeze the lime juice over the top and finish with a drizzle of olive oil.

Season with cracked pepper (and pine nuts if using).
