Ingredients
- 4 cups chilled watermelon, cubed
- 150g feta, crumbled
- A handful of fresh mint leaves, roughly torn
- Juice of 1 lime
- Drizzle of extra virgin olive oil
- Cracked black pepper
- Optional: a sprinkle of toasted pine nuts
Instructions
In a large bowl, add the watermelon cubes and gently mix in the crumbled feta.
Add the mint leaves and toss lightly.
Squeeze the lime juice over the top and finish with a drizzle of olive oil.
Season with cracked pepper (and pine nuts if using).
